You will love the delightful taste of freshly brewed  iced tea.  Serve homemade iced tea to your friends and family for an elegant but simple treat.

 

Any of our teas can be made into iced tea. Simply follow the directions for brewing hot tea but use twice as much tea (2 teaspoons per cup of water) to account for dilution by ice. Add generous amounts of ice and garnish with lemon or mint.

NOTE: Always drink ice tea immediately after brewing. Antioxidants tend to break down quickly, so iced tea left on the refrigerator shelf may loose many of its health benefits. Avoid pre-bottled or powdered ice tea as they contain little, if any, antioxidants and are often saturated with chemicals and sugar.

Tea Ice Cubes: You might also want to pour some of the tea into Ice Cube trays to make Tea Ice Cubes. That way when the ice cubes melt they won't water down your tea. Some people put edible flowers in the ice trays before freezing.

If you brew your tea with hot water, let it cool to room temperature first before adding ice or refrigerating.  

When tea steeps the tannins which are the natural compounds that color tea leaves release into the boiling water.  The heat helps dissolve them, and the brew is clear enough to see through.   But refrigeration causes tannins to separate out again, turning the tea murky.   Generally, higher-quality tea contains more tannins (because it is richer in solids) and is more likely to become cloudy.  Hard water is another culprit behind hazy tea. 
 
Hard water can also make your iced tea cloudy. If your tea turns out cloudy, try adding a little bit of boiling water or a little lemon juice.
